Making Meat Balls
Ingredients for MeatBalls
- 1 kg of thigh meat,
- 2 tablespoons of fine salt,
- 100 gr flour,
- 2 tablespoons sugar,
- 4 cloves garlic,
- 150 gr ice cubes,
- 2 tablespoons egg white.
How to Make MeatBalls
- Cut the meat, then finely ground.
- Puree the garlic, mix with salt and sugar, finely grind.
- Mix the meat with spices, add egg whites, ice cubes, stir until sticky.
- Add starch gradually, stirring until smooth and sticky.
- Print the dough with a spoon, round it by hand, put it in the hot (not boiling) broth.
- Cook the meatballs until they float, remove from heat.
Make beef meatball broth
Ingredients for beef broth
- 1 cow bone (knee / skengkel) cut into 2,
- 100 gr onions,
- 50 gr carrots,
- 25 gr celery,
- 200 gr shallots,
- 100 gr garlic,
- 1 teaspoon pepper,
- 2-3 teaspoons of salt,
- 1 teaspoon sugar,
- 4 liters of clean water.
How to make broth
- Boil the bones with 4 liters of water, until the remaining approximately 3 liters, let stand for a while, strain.
- Cut the onion, carrot and celery.
- Fry (whole) onion and garlic, puree.
- Mix all ingredients, put in the broth, cook until boiling.
- Filter the broth, remove the bones and the stew (broth) is ready to be used for the process of making meatballs or other foods.
Next, put the meatballs in a bowl filled with beef broth, then sprinkle with fried onions and sliced celery leaves.
